Cake for Breakfast

How transforming humble oatmeal gets the ball rolling for other life changes.

It’s not really cake for breakfast. Think of these oats as a way to mix up your morning routine. And if you’re open to adding some grated carrots, imagine the other tweaks you could make to the rest of your day. First oatmeal, then taking 10 minutes a day to launch your dream project. Again, it’s just oatmeal. Kind of like it’s just life. But the things you put into it are what makes it taste so much better. The way you tweak it and make it your own, that’s what makes it (and life) so delicious. Meanwhile back to the oatmeal.

  • 1 cup McCann’s Steel Cut Irish Oatmeal (uncooked)
  • 1 container of 32-ounce Unsweetened Vanilla Almond Milk
  • 2 ripe bananas
  • 1/4 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 cup shredded carrots (skin removed)
  • 1 cup shredded apple (skin removed)
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 1/8 tsp allspice
  • pinch of salt
  1. In a blender add half the contents of the box of almond milk and one banana. Blend. Pour in slow cooker. Repeat with the remaining almond milk and banana, but this time add the vanilla, cinnamon, and allspice . Blend. Pour in slow cooker
  2. Add dry or uncooked) steel cut oats, shredded carrots, raisins, and salt.
  3. Stir to combine
  4. Cook on high in your slow cooker for 4 hours
  5. When done cooking, divide into Talenti containers and top with chopped walnuts

Another addition to my overnight oats: Trader Joe’s Jumbo Raisin Blend soaked overnight in orange juice. Pairs beautifully with the orange zest!
