Oat Flour Pancakes
Only the two of us know the secret to this Breakfast Genius.
Wanna know our secret? Oat flour. I know, I know, it was in the headline. Now before you sigh and say, ‘I don’t need another obscure flour in my pantry,’ relax. I’m pretty sure you already have oatmeal in the pantry. What you’re gonna do is make your own oat flour in the blender. Even better: if you make it the night before, you’re on your way to the easiest pancake you’ve ever made.
More secrets! Pancakes make me happy. So fluffy and warm, these treats suck up maple syrup and butter. Why limit yourself and banish such a treat to only happen on the weekend? Can you imagine how excellent your Wednesday would be if you started it with these pancakes? I’m glad you’re pumped because this new take on pancakes will seriously change your start to the day.

INGREDIENTS
1 cup old-fashioned rolled oats
1 teaspoon baking powder
Pinch of ground cinnamon
2 bananas
1/2 cup nut milk of your choice
Nonstick cooking spray
HOW TO
In a blender grind oats, baking powder, and cinnamon until a flour forms.
Add remaining ingredients (except cooking spray) and blend until smooth.
Coat a nonstick pan with cooking spray and place over medium heat. When the pan is hot, pour in 1/4 cup of batter. Depending on the size of your pan, cook multiple pancakes for a few minutes on each side.
Serve with fresh fruit, sliced bananas, a drizzle of nut butter, or maple syrup.
